What is chana masala?
Chana masala is a chickpea curry, sharp and savoury, cooked in an onion, tomato and spice base until the sauce clings to the beans. It's a Punjabi staple and one of India's most common vegetarian dishes, from street stalls to home kitchens. When it's served with bhature, a puffy fried bread, it's called chole bhature.
What's in it
- Chickpeas (kabuli chana), soaked and boiled
- Onion, tomato, ginger, garlic and green chilli
- Spices: cumin, coriander, garam masala and chole masala, a ready-made blend
- Sour notes from amchur (dried mango powder) or anardana (dried pomegranate seeds)
- Oil, ghee or butter, and sometimes a pinch of hing
Some cooks boil the chickpeas with a tea bag or dried amla for a darker colour, as in pindi chole, a drier, darker style from Rawalpindi. It's served with bhature, kulcha, puri or rice.
Allergens and diets
Chana masala has fewer allergens than most curries, but check the fat. Many restaurants cook it in ghee or butter, or finish it with a spoon of cream or some grated paneer, so ask about milk if you're vegan or allergic.
Coeliac (celiac) diners have two things to check. The curry itself is wheat-free by recipe, but some cooks add hing (asafoetida), and powdered hing is often compounded with wheat flour. The bigger issue is the bread: bhature, kulcha, puri and naan are all wheat, and bhature dough often contains yoghurt too. Ask for rice instead.
Some Punjabi kitchens cook in mustard oil. Spice blends vary by brand, so if you have an allergy beyond these, ask to see the masala packet. Chickpeas aren't one of the regulated allergens, but chickpea allergy exists, particularly in South Asia; if you react to legumes, this dish is built on them.
