What is Schweinshaxe?

Schweinshaxe is a whole pork knuckle (the lower end of the leg), roasted for hours until the meat falls off the bone and the skin puffs into hard, salty crackling. It's a Bavarian beer hall classic, served on a big plate with a dark beer gravy, a dumpling and sauerkraut or cabbage salad. One knuckle is a very large meal.

What's in it

The knuckle is seasoned with salt, caraway, garlic and pepper, sometimes boiled or simmered first, then roasted on a bed of onions and root vegetables. Dark beer and stock are poured in during roasting; those juices make the gravy.

Sides you'll usually see:

  • Knödel: a potato dumpling (Kartoffelknödel) or bread dumpling (Semmelknödel).
  • Sauerkraut or Bayerisch Kraut (sweet-sour cabbage with caraway, often with bacon).
  • Krautsalat: cabbage salad with caraway and vinegar.
  • Sweet or medium mustard (süßer Senf) on the side.

Related dishes elsewhere: Austria's Stelze, and Berlin's Eisbein, a cured pork knuckle that's boiled rather than roasted and served with pease pudding and sauerkraut.

Allergens and diets

Gluten comes from two directions. Beer is brewed from barley and is a standard part of the gravy, and bread dumplings are made from day-old wheat rolls. Potato dumplings are the better bet, but many recipes add flour, semolina or a crouton centre. If you're coeliac (celiac), ask for boiled or roast potatoes and skip the gravy unless it's confirmed beer- and flour-free.

Celery is in the roasting vegetables, so assume it's in the gravy. Mustard is the standard table condiment, and some cooks brush it on the skin before roasting.

Bread dumplings contain egg and milk. The cabbage and sauerkraut are often cooked with lard or bacon, and some kitchens add white wine.

On the menu

Look for Schweinshaxe or Schweinshax'n (Bavarian spelling) under Schmankerl (Bavarian specialities) or Hauptgerichte. "Mit Knödel und Kraut" means with dumpling and cabbage. It's sold by the piece, sometimes as a half (halbe Haxe) for smaller appetites. "Solange der Vorrat reicht" means while stocks last, a common note on dishes roasted in batches.
