Diets

  • Not vegetarian or halal: it is pork, and some shops fry in lard.
  • Not suitable for coeliacs (celiacs): the coating is wheat and the sauce often is too.
  • Chicken katsu uses the same coating, oil and sauce, so the allergen picture is the same.

Recipes change from kitchen to kitchen. If you have an allergy, confirm every ingredient with the restaurant before you order.

What is tonkatsu?

Tonkatsu is a thick pork cutlet coated in panko breadcrumbs and deep-fried, then sliced into strips and served with a sweet, tangy brown sauce. It was developed in Tokyo in the late 19th and early 20th centuries from Western-style cutlets, and it's now a standard lunch set across Japan.

What's in it

The pork is dusted in wheat flour, dipped in beaten egg, pressed into coarse panko and fried. You usually choose the cut:

  • Rōsu (loin): juicier, with a strip of fat along the edge.
  • Hire (fillet): leaner and more tender, usually a little dearer.

A set meal (teishoku) adds a mound of raw shredded cabbage, rice, miso soup or tonjiru (pork and vegetable miso soup) and pickles, and many shops refill the cabbage and rice for free. Tonkatsu sauce is a thick cousin of Worcestershire sauce, made from fruit and vegetables such as tomato and apple, vinegar, sugar and spices. Karashi (hot Japanese mustard) and lemon sit on the side.

Variants include katsudon (simmered with onion and egg in a sweet dashi broth over rice), katsu karē (with Japanese curry), katsu sando (in a sandwich) and Nagoya's miso katsu, topped with a sweet red miso sauce.

Allergens and diets

Assume gluten and eggs in the coating. Some panko and batter mixes also contain milk.

Tonkatsu sauce varies by brand. Some use soy sauce (so soy and more wheat), others use soy-based yeast extract, and fruit such as apple is standard. Many shops serve a small bowl of sesame seeds to grind and mix into the sauce. Karashi is mustard, and some places stir it into the sauce for you.

The fryer is the hidden risk. Tonkatsu shops often fry prawns, oysters and croquettes in the same oil, so crustaceans and molluscs can reach your cutlet. The miso soup in the set is usually made with fish dashi. Katsudon adds dashi and egg again.
