What is döner kebab?

Döner kebab is meat stacked on a vertical spit, roasted as it turns, and shaved off in thin slices. Döner means turning in Turkish. In Turkey it's often eaten on a plate with rice or in a simple bread or wrap; in Germany and much of Europe it's the late-night favourite stuffed into a wedge of flatbread with salad, onion and sauces.

What's in it

Traditional döner is layered slices of lamb, beef or veal (or chicken, tavuk döner) marinated with onion, salt, spices and often milk or yoghurt. Many European cones are made partly or wholly from minced meat pressed into shape, which allows binders.

Ways it's served:

  • Ekmek arası: in bread, often a half loaf or pide.
  • Dürüm: rolled in thin lavaş.
  • Porsiyon or pilav üstü: on a plate, sometimes on rice.
  • İskender: sliced over cubes of pide with tomato sauce, browned butter and yoghurt.
  • German-style döner: in toasted flatbread with lettuce, cabbage, tomato, onion and a choice of yoghurt, herb or chilli sauce.

Allergens and diets

The meat can carry allergens before any sauce goes on. German food guidelines list eggs, milk and yoghurt among the normal ingredients of döner meat, and cheaper cones can also contain breadcrumbs, starch or soy protein. A cone labelled only as a "Drehspieß" (rotating spit) rather than döner is the most likely to have these extras. If you have a milk, egg, wheat or soy allergy, ask to see the cone's label.

Bread brings gluten and often sesame. Turkish pide and some flatbreads are topped with sesame or nigella seeds.

The white garlic sauce is usually yoghurt, so milk. Herb sauces can be yoghurt or mayonnaise (egg, sometimes mustard). Ready-made sauces and seasoning blends may list celery.

On the menu

In Turkey look for döner, then the meat: et döner (beef or lamb), tavuk döner (chicken). Prices are often by portion size: yarım (half), tam (full), or by grams for plates. In Germany the board usually lists Döner, Dürüm, Döner Teller (plate) and Döner Box (meat and fries in a box). Many German menus also carry allergen letters in footnotes.
