What is shawarma?
Shawarma is thin-sliced meat shaved from a tall, slowly turning spit, wrapped in flatbread with sauce and pickles. The meat is marinated overnight in spices, acid and often yoghurt, stacked in layers, and roasted in front of a vertical grill. It's a direct relative of Turkish döner, and the name comes from the Turkish çevirme, meaning turning.
What's in it
The most common versions are chicken, lamb or beef. Chicken marinades lean on yoghurt, lemon, garlic and seven-spice; beef and lamb marinades use vinegar, onion, cinnamon, allspice and cardamom, with lamb fat layered in for moisture.
What goes in the wrap depends on the meat:
- Chicken shawarma: toum (a whipped garlic sauce), pickled cucumber, often chips (fries).
- Beef or lamb shawarma: tahini sauce, tomato, onion with sumac, parsley and pickled turnip.
- Arabic-style (shawarma arabi): the wrap is cut into pieces, toasted, and served with garlic sauce and fries.
Allergens and diets
The bread is the obvious gluten. Ask for a plate of meat, salad and sauce without bread, but check the marinade too: some kitchens add flour or ready-made spice mixes.
Sesame comes from tahini sauce, which is the default with beef and lamb. It can also sit in squeeze bottles next to the garlic sauce and get used across orders, so ask for a fresh spoon if your allergy is severe.
Milk is often in the meat itself. Yoghurt is a classic chicken marinade, and you can't scrape it off once the meat is cooked. Ask before ordering if you have a milk allergy.
Toum is traditionally just garlic, oil, lemon and salt, emulsified without egg. Many takeaways outside the Middle East use a mayonnaise-based garlic sauce instead, which means egg and sometimes mustard. Pickled turnips and vinegar marinades are a possible sulphite source.
On the menu
Look for شاورما (shāwarmā), then the meat: دجاج (dajāj, chicken), لحم (laḥm, meat, usually beef or lamb). صحن (ṣaḥn) means a plate rather than a wrap, and عربي (ʿarabī) marks the cut-up Arabic style. Prices are low and sizes usually come as a regular or large wrap.
